By Hand

“What’s the best present you’ve ever received that was handmade by the giver, not store-bought? Tell us what made it so special.”

I had my birthday not too many days ago and you know you have come a long way when the wishes from friends and family had come down to a few precious ones. Come on, it’s not as sad as it sounds really. It’s like after blowing away all the froth on the top of your cappuccino, you will see that’s where the real coffee is 🙂

One of my closest friends, Priscilla, who has been a working mom and not known for her culinary skills, decided to do the unthinkable… bake a birthday cake for me! I was taken by surprise when she and another 3 bosom friends treated me to a sumptuous chinese dinner. After dinner, she whipped out the cake so that they could formally let me make a wish and blow out a candle on my birthday. I was actually moved beyond words…

It was not much of a looker but you can see that it was indeed a cake. It was no ordinary cake because it was a low carb high fat (LCHF) cake which was really difficult to achieve as you need the `unusual’ ingredients to bake it. For someone who hardly bake, the effort was equivalent to asking someone who only knows how to sew a button back on a shirt to sew a whole dress!

We all had a slice each and it tasted like a combination of cheesecake and custard and I loved it. The leftover became my breakfast meal for another 3 days and I loved it more 🙂

I have been richly blessed for such dear and wonderful friends who made my life so colourful and melodious and I thank God for each one of them upholding them in prayers to be as richly blessed and with abundant love, peace and joy!
